Söderberg is a Swedish artisan bakery and sister business to Peter’s Yard cafe in Edinburgh. Established by a quiet Swede, Peter Ljungquist, who believes in making honest, well-crafted goods that are as individual as the people who create and enjoy them, we bake a range of Swedish classics. Whether you’re after a coffee and a cardamom or cinnamon bun, an almond-filled “mazarin” or slice of “kladdkaka” (chocolate mud cake), a sandwich, soup or salad to take away for lunch, or a jar of jam and a loaf of sourdough bread to slice up and enjoy at home – we always use the best ingredients in everything we make and pour ourselves into everything we do. Many of our recipes have been developed with the help of Swedish baker, Jan Hedh, and are the kinds of thing you would expect to find in the home of any Swede.
We care deeply about the products we make and want to work with others that share our values. Our coffee comes from Swedish roaster Johan & Nyström, whose Stockholm cafe was recently named one of the best in the world, and we source our teas from Anteaques in Edinburgh. Behind every loaf there is a pair of hands kneading dough before dawn. Behind every coffee, a barista carefully adjusting the grind of espresso. Behind every loaf of bread, a slow-fermenting sourdough starter that is nurtured every day. The sticky fingers, flyaway coffee grounds and jars of bubbly starter aren’t very glamorous, but we love getting stuck into everything we do.
